Balloon Flight over the Château de Chenonceau from Francueil

This is the one that flies over Chenonceau itself. The balloons take off close to the château and cross above it, which matters more here than at most castles: Chenonceau is built out over the River Cher on a bridge of arches. From the bank you see a facade. From a basket you see what it actually is, a building standing in a river. The morning runs about three hours in total. Passengers help inflate the envelope before boarding, which is the part most people do not expect to enjoy and then do. Champagne at the landing, and round-trip transport from Francueil is included. Times shift with sunset, so check the hour rather than assuming last week's.
