Balloon flights in Cappadocia happen inside a narrow window. Turkish civil aviation permits launches at dawn only, when the air is coldest and steadiest, so the whole fleet goes up within the same short stretch and is back down before the ground starts to warm. The morning is built around that slot: envelopes filling by burner light, take-off as the sky changes colour, landing not long after. The route goes over the fairy chimneys and the rock-cut churches. At ground level those churches are doorways and windows punched into a cliff face, easy to walk past. From the air the logic of them shows. Chapels and dwellings were cut into the same soft volcanic rock as the cones standing beside them, and the valleys read as one worked surface rather than a list of separate sites. Height also flattens the distance between them, so the density of what was carved here becomes obvious in a way no viewpoint on the ground can match. More hot air balloons go up here than in any other region, which is part of why that dawn window is so crowded. Wind and visibility still decide the morning. Flying is possible on something like 250 to 300 mornings in a year, and the losses run heaviest from December to April, so a stay with more than one possible flight day in it is the safer way to book.
